How to make a fun spring breakfast for your kids: Egg & Potato Bird nests

Spring is almost here and we are so excited for long days of playing outside again!

Here is a very easy way to celebrate Spring with breakfast.  I made home-made hash browns by shredding potatoes and some onion, salt and pepper.  Then, I fried it on the stove top until it was browned and thoroughly cooked.   When the hash browns were almost done, I whipped up 3 eggs,  poured the mixture into a frying pan and cooked it until it was done.  Then, I transferred the egg mixture onto a plate and used my egg shaped cookie cutters from William Sonoma to cut out little eggs. 

Once everything is ready, just make your hash brown birds nest and place your eggs in the middle.  I think they look so cute!
